Zesty Beet Salad

beets detox fertility window hormones neural tube defects

💃ZESTY BEET SALAD💃

Serves ~5-6

INGREDIENTS:

⤳1 large red beet

⤳1 large golden beet

⤳1 large shallot

⤳1 tsp salt

⤳Generous sprinkle pepper

⤳1 tbsp extra virgin olive oil

⤳1 tbsp red wine vinegar

⤳Splash orange juice

⤳1 heaping tsp orange zest

⤳Fresh parsley to finish

DIRECTIONS:

⤳Chop beets into fine cubes (you can also use a grater or a food processor depending on the consistency you want). Mince shallot.

⤳Toss beets and shallot in olive oil, vinegar, salt and pepper. Add a splash of OJ and orange zest. Toss again to combine.

⤳Serve with fresh parsley and enjoy!

Did you know? Beets are high in Betaine, which has been associated with reduced risk of neural tube defects. They also contain insoluble fiber, great for hormone balance, and soluble fiber, which acts as a prebiotic for the probiotics in our gut.
